About Javier Alvarez

Born in Mexico City in 1972, after completing his high school studies, he devoted one year to the study and deeper understanding of human values and interpersonal relationships. In Dublin, Ireland studied “Business, Economical and Social Studies” at Trinity College Dublin, one of the most highly recognized universities in Europe, back in Mexico City completed his Bachelor’s degree in Business Administration followed by studies in Finance and a Master’s degree in Humanities from Universidad Anáhuac, and is currently a doctoral candidate at the same institution. Professionally, he joined Universidad Anáhuac as Assistant to the CFO. One of his main responsibilities was contractual and pre-operational negotiation with Le Cordon Bleu International, the world’s leading culinary education institution opening Le Cordon Bleu–Anáhuac in April 2002, the same year he was appointed General Director. He successfully led the project, with more than 500 students per year from over 15 different nationalities. In addition to education, led a commercial component involving brand licensing partnerships with major national and international companies. Javier also operated the Cordon Bleu-Casa de Francia restaurant in Mexico in partnership with the Embassy of France. In 2005, he was appointed Director of the Faculty of Tourism Administration and Gastronomy at Universidad Anáhuac. In just over two years, he tripled the number of students in the Faculty of Tourism, as well as its laboratory infrastructure and its national and international prestige. He has been a speaker at various conferences and academic and professional events, primarily in Mexico, Peru, Chile, Argentina, Spain, and Italy. He has served on the editorial boards of publications and has written articles as a guest writer to magazines such as High & Beyond and Forbes as a monthly columnist. He is co-author of several books related to gastronomy and morality.
